What is the correct water cement ratio to go off of? I’ve seen contradicting ratios in multiple sources.
The correct water to cement ratio depends on the type of cement that you are mixing. Fast drying cement for example would use a different combination of materials to water ratio than normal. Perhaps our resident architect @coachchrishopstock can weigh in.

@coacheliserenwick is absolutely right, unfortunately the answer is ‘it depends’. Since it depends, don’t expect a question on the ARE that asks ‘what’s the correct water-cement ratio?’ but rather, focus on understanding a few things about this ratio - that it affects the workability and strength of the concrete once cured and that it can be tested using the slump test.
