Other than consultant drawings, in which of the NCARB resources can I find good diagrams of electrical switches and also switch-pole(?) diagrams?

I’d definitely take a look at ‘Mechanical and Electrical Equipment in Buildings’ (MEEB) for this.
This is a little off topic and isn’t an NCARB approved source, but I also really like Archtoolbox.com 's page on electrical symbols. I pull this open for reference when I’m working in practice some times.
From the link below you can access graphic conventions for everything from power and lighting symbols to architectural hatches. These all align with accepted professional standards.
